Paniza's Last Grenache

Paniza Ultima Garnacha is a limited and numbered edition of 25,000 bottles. To make it, the last Garnachas are used, which are vinified each year, since they are Garnachas from several vineyards located in the highest areas of our vineyards. This altitude makes its ripening slower and its optimal state for harvesting is somewhat later than the rest of the others. On its label we can see a pencil almost finished, which exemplifies that the harvest is almost done, the work done, and that remaining pencil, that last Garnacha with which we closed the campaign.


After destemming and crushing, fermentation lasts 15 days. The fermentation is temperature controlled in stainless steel, with various pump-overs each  

Tasting Notes

A bright, intense cherry-red color. Black cherry, cedar and earthy notes stand out on the nose. Chocolate and rich balsamic notes flavor the elegant and lengthy palate.

Crianza Spanish Red Wine

  • 100% Grenache variety
  • Denominación de Origen Protegida Cariñena.
  • A selection of exemplary Garnachas from our 6,900 acres of vineyards. Grapes from out vineyards planted at higher altitudes, at the foot of the mountains of the Iberian system.
  • Brown limestone soils on marl and sandstone. Slate soils are found in the highest-altitude vineyards.
  • 6 months in medium-high toasted French oak, bottle ageing.
  • 15% ABV


Roasted or grilled meats, braises and rich bean stews are natural partners to this versatile wine. Sheep's milk cheese paired with our Garnacha would be a perfect start to a meal. Serve between 60-66 degrees.
